AlphaCloud, the BFFood project that analyzes and optimizes ham curing processes
Presented for the digital quality management challenge of the first edition of BFFood, AlphaCloud is a project that emerged in the technology company TripleAlpha. Its technical director, Álvaro Dosil, has told us what this platform consists of and what led them to apply to Business Factory Food.
In the acceleration phase they are currently in, they are having the opportunity to be mentored by José Manuel Núñez, CEO of Torre de Núñez; a company fully aligned with their project. Do you want to learn about it?
- Why did you decide to apply to BFFood?
Currently 70% of TripleAlpha’s clients belong to the agri-food sector. We wanted to be part of an initiative like BFF, where there is direct involvement of leading companies in the sector to validate our methodology, ICT tools and learn firsthand the feedback from experts.
- How did the idea for your project come about?
Companies generate and store a multitude of operational data that, in most cases, they do not use to optimize their own manufacturing processes. Faced with this situation, we detected the opportunity to help them analyze it through advanced statistical techniques, mathematical modeling or machine learning to improve their productivity and profitability.
- What do you bring that is new to the sector?
While there are other consulting firms specialized in data analytics, our experience in the industrial sector makes us a reference in this field.
- You address the digital quality management challenge posed in the first edition of BFFood. What technologies do you use for the development of your project?
We have developed our own cloud platform, AlphaCloud, based on the tools provided by Microsoft Azure.
It is a flexible and scalable machine learning platform with a high degree of customization that allows analyzing and optimizing manufacturing processes, through prediction and prescription algorithms based on advanced analytics techniques. Due to the enormous potential of the ham curing sector, we have customized it for this field.
- At BFFood you have José Manuel Núñez, CEO of Torre de Núñez, as a mentor. How is the experience going?
José Manuel’s work as a mentor goes beyond the enormous knowledge he has of the production process and the sector. His curiosity and initiative are also helping us discover new opportunities that we had not initially thought of. Without a doubt, he is being key to the success of our project!
- Have you created any type of synergy with the other BFF participants?
We have met with PS-Vet Dairy Quality, which participated in the first rounds, and we have had conversations with other participants that we hope to resume after the summer to explore possible collaboration opportunities.
- Would you recommend BFFood to other entrepreneurs?
Of course! BFF has allowed us to have greater access to the food sector, have the full support of its team and receive training throughout its development.
